Chocolate bannana bread ......Amazing

Was not sure why everyone has been raving about cooking banana bread but now i have made some i understand why .....its lush.
I came across the below recipe on social media and just in time as had some over ripe bananas in my fruit bowl that were starting to go black and squishy. Not nice to eat like that . I had already used 2 of them to make my slimming world banana and blueberry pancakes and still had some left in the fruit bowl. I hate throwing anything away.



Ingredients
2 large ripe bananas
200g plain flour
100ml vegetable or sunflower oil
1tsp vanilla extract
2tbsp cocoa powder
1 egg
1tsp baking powder
pinch of salt 5
50g brown sugar
100g chocolate chips 

Method 
grease and line a loaf tin with baking paper 
Preheat oven to 180 degrees
Mash up the bananas and mix with all the wet ingredients in a large bowl. I used a food processor as easier than having to stir 
Then add all the dry ingredients and mix well . If mixture seems too thick add a splash of milk
Pour into prepared tin and bake in over for approx 45-50 minutes . 
Test with wooden skewer which should come out clean and cake should shrink away from sides of tin. 
Leave to cool in tin 
I had a slice whilst still warm and spread with Nutella it was lush .





Pink Russian cocktail

Saturday nights cocktail was called pink Russian and very nice indeed. So nice I had two. Now I need to decide on next Saturday cocktail to make......?? Any suggestions?

25ml kaula
25ml vodka
25ml tequila rose
35ml cold milk
Ice cubes
Cocktail shaker

Put all above into shaker and shake vigorously until the ice melts and no longer rattles about. Pour into glass and top with whole strawberry on side of glass.....ENJOY

Biscoff cheescake

OMG ......this tastes amazing and super easy to make. My whole family loved it so want to make again once we can have friends over.

Homemade chocolate truffles - Golden Oreo

There has been lots of new recipes on social media since lock down and this is one of them i  decided to try . Only 3 ingredients like the fudge recipes and super easy to make.

Makes about 12                           
10 Golden Oreo biscuits
60g cream cheese
120g milk chocolate


Put biscuits into a food processor and blitz until fine crumbs then mix in the cream cheese . If you do not have a food processor put in a clean seal-able bag and bash with rolling pin. Keep a few crumbs to sprinkle over once coated in chocolate

Roll into bit size balls and put in freezer for 30 minutes.

Melt the chocolate in small bowl and dip the balls in and remove with spoon or fork and place on baking paper. Sprinkle over the saved crumbs

Put in fridge to set the chocolate.
Best keep in fridge if they last that long

You can change it up by using chocolate Oreo and then white chocolate to coat.

My two new H&M summer dresses



Just received these over the weekend and will be keeping both of them however i do prefer the blue one . Just in case you are thinking of ordering they come up small. I am high street size 12 and had to get the blue one in size 16 and the pink/red one in size 14 !!!!!!!
 The silver mules are by Priciples from Debenhams . I was lucky as i got them for half price few weeks ago . They are super comfortable and still worth the full price of £15

Crunchie traybake

Made this today .........very nice

Crunchie traybake

cake
225g baking spread , i used stork
225g light muscovada sugar
4 eggs
225g self raising flour
1 level tsp baking powder

Topping
100g softened butter
175g icing sugar
25g light muscovada sugar
2 tbsp milk
Crunchie bar

lined and greased baking tin 12x9 inch
Heat oven to 180fan/160 degrees Celsius

Put all cake ingredients in a large bowl and mix together until combined and  light and fluffy

Pour mixture in your greased lined tin and put in oven for 25 to 30 minutes . It should be golden brown on top and shrunk away from sides of tin. Remove from oven and leave to cool completely in the tin.

For the icing put all ingredients into large bowl and beat with a spoon until light and creamy. Spread evenly over the cooled  cake.

Bash the Crunchie bar still in wrapper with a rolling pin until broken up then sprinkle over top of icing .  Cut into squares and ENJOY

For the icing i could not get any icing sugar , i tried 4 different shops !!!! Instead i managed to get a ready made vanilla frosting. I added 1 tsp of caramel flavouring to this and mixed well. It gave it a lovely flavour

Chocolate martini cocktail

Made this tonight for me and hubby. Have made Espresso martini in past but thought i would give this a go being a chocolate lover.  It did not disappoint ......so nice may have to make another one


1 heaped tbs chocolate spread
125ml milk
100ml amaretto
ice cubes


Add all ingredients to cocktail shaker and shake vigorously. Stain into 2 martini glasses.
Can add grated chocolate over top if you want

3 ingredient 3 step popcorn fudge


Last night i made this delicious chocolate popcorn fudge with just the below 3 ingredients in 3 easy steps




500g milk chocolate
397g can of condensed milk 
80g approx toffee popcorn 



















Step 1 
Break up the chocolate into large heavy based saucepan and add the condensed milk.












 Step 2

Place on a very low heat and stir  often until melted and smooth and creamy





Step 3

Remove from the heat and stir in the popcorn. Pour into a square 8cmx8cm lined tin and put in fridge to set overnight.
Cut into squares and enjoy



Variations : Try adding crushed Malteasers or Crunchie bar instead of popcorn or use white chocolate like my recipe on blog for Cookies and cream fudge.

Lemon berry roulade - slimming world recipe



Check out the dessert i made for the weekend and its low calorie or low sins if doing Slimming World like me . I used fat free greek yougurt to fill it but if you are not worried about the calories you could use fresh cream insead.   Works out at  3 sins per slice but i drizzled melted white chocolate over it before putting it in the fridge so this made it 5 sins per slice. It was quite easy to make and tastes good.

One skirt 4 different looks

If you read my blog you will know that at present I like the pleated skirt. Mainly because it has a elastic waist band which comes in handy when you eat too much and also because of its versatility.

2 wear or not 2 wear - Helene Berman pleated skirts

I so love a pleated skirt at the moment which is currently on trend and has been since last year. However i remember about 4 years ago i brought a grey chiffon pleated skirt and my husband said i looked frumpy and it was something my mum would wear !!!!!!  I recently got rid of it and have replaced it with many lovely printed ones like the 3 i have from British designer Helene Berman.

They are versatile too as can be worn with a cosy jumper in winter with boots or in summer with t shirt and trainers . I love to wear them as casual look with a biker jacket to give it an edge.
