White Chocolate and Strawberry Cheescake - Slimming world recipe





This dessert is amazing for a slimming world recipe and i have made many times . It is also very easy to make and works out at just under 6 sins per slice. Its a baked cheesecake which has a very creamy texture and taste .....It looks good too !!!!!



 





Ingredients   serves 6 and just under 6 sins per slice 

 10 ginger snap biscuits  - 25 sims 
 2 tbs low fat spread (i used flora light) - 6 sins 
 500g fat free Quark 2 Eggs 
 1 sachet options white hot chocolate powder  - 2 sins 
 5 tbs sweetener 
 Sachet sugar free strawberry jelly powder  - 2 sins 
200g Strawberries

 Method 

 Heat oven to 180 degrees 
 Line a 6 inch loose bottom tin with baking paper
 Crush the biscuits in a food processor until fine crumbs or use old method of bag and rolling pin. 
Melt butter and stir in the biscuit crumbs 
 Mix together and press firmly into the bottom of the tin with back of spoon 
 Put the Quark , eggs , sweetener and Options white hot chocolate powder into food processor or large bowl and mix until combined and creamy Pour into tin gently over the biscuit base . 
Bake in oven for 25 to 30 minutes until it starts to firm up . 
 Remove from oven and allow to cool completely. 
 Once cooled make up the jelly as per packet instructions and leave to cook down but not set.
 Slice strawberries and arrange on top of cheesecake then very gently pour over the cooled jelly (may not need to use all this as i did not) 
 Put in fridge until jelly sets 
 Cut into 6 generous slices and ENJOY. I like to serve mine with some squirty cream on the side which will add to the sins.

Saturdays cocktails

 
Saturday nights cocktails were both nice , check them out below defiantly worth making 


Donna's creamy Tini                                   
One serving 

25ml Amaretto 
25ml Rose Tequila 
25 ml Cherry Brandy 
35ml Milk (or use half milk and half cream) 

Pour into cocktail shaker with about 4 ice cubes and shake vigorously until ice stops rattling about and melts. 
Pour into martini glass and add garnish with a cherry 














Strawberry Shortcake Martini 
one serving  

25ml Amaretto
25ml Rose Tequila 
25ml Vanilla vodka 
35ml milk or half milk and half cream 

Pour into cocktail shaker with about 4 ice cubes and shake vigorously until ice stops rattling about and melts. 
Pour into martini glass and add garnish with a strawberry ( i used a cherry as did not have any strawberries )

Chocolate Baileys Panna Cotta - Slimming world dessert

Hi
Made this over the weekend and it is a dessert that I make often as super simple and very nice considering its only 4 sins if following Slimming World plan . I once served this at a dinner party and it went down well and they could not guess it was a slimming world dessert.


Makes 4 portions

400ml Fat free vanilla yogurt  - 6 sins
2 sheets of leaf gelatine
1 tbs cocoa powder  -2.5 sins
2 tbs sweetener
150ml semi skimmed milk  - 3 sins, or use towards he a
1tbs Baileys (1 used salted caramel flavoured one)  -  4 sins

Method
Soak the gelatine sheets in cold water for about 10mins till they go soft

Put 150ml milk into jug and stir in the Cocoa powder and sweetener. Place in microwave to heat for about 1 minute .

Squeeze the water from the soften gelatine sheets and stir into the milk mixture until all melted together.

Add the Baileys and stir in the yogurt . Stir gently until all mixed together and smooth .

Pour into 4 little pots or moulds/ramakins. Put into fridge until set , preferably overnight .

When ready to serve tip pot upside down over plate or bowl and give it a tap until the Panna Cotta falls out . It helps if you place the filled pot in a dish of warm water for a few seconds .
I like to serve mine with some aerosol cream or you could drizzle over melted chocolate which would then add to the sins.
They will keep in the fridge for 3-4 days

Cocktail called 'Double Your Pleasure, Double Your Fun '

Made this cocktail Saturday night it was nice but very strong. I think it would be good as an after dinner drink as very minty

Serves one
25ml Vodka
50ml Cold milk
25ml Kahula or coffee liqueur
50ml Green crème de menthe or mint liqueur (1 think using just 35ml might taste better)
ice cubes

Place all above into cocktail shaker and shake until ice cubes melted. Pour into a Martini glass

Saturday nights cocktails

Started with a traditional Tom Collins
35ml gin
25ml lemon juice
20ml sugar syrup
Ice cubes
Mix all above in a tall thin glass then top with soda water. Serve with slice lemon and cherry.
It tasted OK but I preferred the second one a made which was called raspberry Tom Collins. Made same as above but add about 4-5 raspberries to gin, lemon juice, sugar syrup and press and stir with wooden spoon to squash up raspberries. Then top with the soda water..... Had much more flavour than traditional Tom Collins.... nice bright colour too...






This cocktail is called a Baileys vanilla silk and my hubby made this for me …..it was Lush
He added 35ml Baileys, 25ml vanilla vodka and 25ml Amaretto plus ice cubes into cocktail shaker and shaked up  until ice disappeared. Then poured into martini glass ...

Biscoff Fudge - super easy to make

Today i made the easy Biscoff fudge and it tastes delicious . Below is the recipe

397g tin condensed milk
400g while chocolate
100g Biscoff spread
approx 8 crushed Biscoff biscuits

1. Melt the white chocolate and condensed milk in a large heavy based saucepan over a low heat. Then add the Biscoff spread. Stir until all the chocolate melted and mixture is smooth and creamy .

2. Remove from heat and stir in the crushed Biscoff biscuits

3. Pour into square tin lined with baking paper . Put in fridge to set then cut into squares and ENJOY

All dressed up but no where to go ......Lipsy dress

Hi
Just tried this Lipsy brand dress on as i need to decide if i am going to  keep it........ I already have the perfect rose gold shoes and bag which i think go really well with it . Alternatively i have some silver shoes and bag that would look equally good too.
As you know i am a big fan of the pleated skirts and love the uneven hem look too ...this dress ticks both of them !!!!!!  I ordered it from the Next sale which recently opened online, it is half price .

slimming world dessert - baseless fruit cheesecake

If you are following Slimming world plan or just watching your weight the below dessert is worth making as hits the sweet spot without loads of calories or sins !!!!! With all the fruit is must be healthy too. I like to serve it with squirty light cream   





Ingredients    10 sins for whole thing

500g fat free vanilla yogurt ( i used Yeo valley one)
250g quark
50g Fat free plain greek yogurt
6 sheets leaf gelatine
1tsp vanilla essence
2 tbs sweetener
about 250g of berries or other fruit
1 sachet  11.5g sugar free blackcurrant jelly powder (you can use any
flavour if you want)
1 tin 9x9 inch lined with cling film





Method

Soak the gelatine sheets in cold water for 10 minutes
Put the quark , yogurt , vanilla essence and sweetener.
 in a food processor and mix well . If no food processor could mix or  whisk  in a large bowl.
Squeeze the water out of the gelatine sheets and add to a jug of 100ml hot water . Mix until melted.
Pour this into the yogurt mixture and stir /whisk for few minutes
Pour into your tin lined with cling film and place in fridge for 2-3 hours to set..
Put the jelly powder into a jug of 250ml hot water and stir till dissolved. Leave to cool but not set.
Decorate your chilled cheesecake with your chosen fruit and then gently pour over the cooled jelly.
Return to fridge till jelly is set .
To serve cut into squares , i normally make 6 generous  servings which works out at under 2 sins per serving without the cream
Will keep in fridge covered for about 4 days
